What is the dealer going to do that you cannot? There are no diagnostic tests. They will pull the wheel and look. The same thing that you can do, and save some money at the same time...
All the ebrake relocation does is relocate the Cables and the cable mounts for the ebrake caliper so they clear the 18" wheels. The caliper stays in place. They are under a 100 bucks. I got mine @ SnakeOyl.

Unlike the Gen 1,2 & 4 engines, the Gen 3's pump has to work twice as hard because not only does it work the rack but it also runs the radiator fan.
The pump guts are identical to the others but Dodge attempted to get the most out of the pump by making the pump inputport from the reservoir...

To apply your reasoning along a similar path, it seems to me that you would want the handling of a race car but the ride of OEM. Something that isn't going to happen.
The durometer of the mounts was purposely made harder in order to counteract the compressability of the stock spongy mounts...
It is very easy to install them. No rear alignment is necessary as none of the settings change. It would help to have a shop manual for the torques specs and specific procedures to remove the rear toe link joint if you are unfamiliar in doing so.

I got mine also. No Airbag Lite on my '04 but I can tell you it has planted a seed and I'll think about everytime I get into the seat until its fixed.

A couple of days ago I received an email from Shawn at LAPS saying that they had a track day planned for May 11 at RA.

Maybe that is what Zytek got during the bankruptcy... So many others were left out in the cold. Take a look at the new suppliers of the same parts that were used in the previous generations of Vipers. The bankruptcy did a lot of ugly things to folks.
