Those O-ring style gaskets are pretty good, I've had my valve cover off at least a half dozen times reusing the same gaskets.
Sounds like maybe a crack developed in that area.

When swapped my T56 for a TR6060, I used a Gen4 driveshaft. But only the yoke is different, driveshaft is the same. I also spaced the slave cylinder with this:

Have you checked the U-joint angles? Moving the tail housing up/down will change them. The angle of the u-joint in the front needs to be the opposite of the one in the rear.

Your fans are programed to come on at 207F. Another thing to keep in mind is that your oil temp sensor is after the cooler, so the oil is actually warmer in the pan.
