I had 3.73 gearing in my 99 TransAm Heads/Cam and it felt way too short for me. I love the long pull of the Viper, using every inch of TQ the V10 lays down. If it didn't die at about 5k RPM I guess it would be okay for 3.73's.
Just look around for mufflers with the diameter piping you want. I just bought some mufflers from a mustang website. 3" in and out... also got some real nice cats.
I am in the same ball park, got 2 mufflers for $200.

I just had to get over scraping my front fascia, I cringed at first but now I don't care, it is driven... that's proof. Now if something totally rips it off, yeah that sucks! haha
You should be able to get in there and remove that old insulation. Maybe, you can find some more modern foil insulation and get the right amount that will fit in there.
Take the old out, measure it and find a sheet somewhere to replace it. Another thing about those gills is added drag.

I wish I had some killer skill to get mine easy. 24 when I got my 98 GTS in 2008, saved it from some other young moron guy that wasn't taking good care of it.
