Although the base map in the AEM is a good start, it is far from perfect. You need to tune your car, it will be worth a good bit of power. The map was made on a stock 1997 car which only made 422rwhp after tune.
On my car tune over the base map was worth 15rwhp and even more torque...
Check the wires, make sure they are all connected and solid. Far as the plugs go, unless you tell me that the car is heavily modded or uses nitrous I don't see how you could have damaged the plugs with only 6k miles on the car.
Did you remove the wires recently? Possibly plugged them back on...

On a car like yours you can't just remove cats without tuning. You have lots of mods and power output much higher than factory.

I have never seen a car loose anything when it came to hp when cats were removed.

The reason to delete cats is not a power boost, but rather a fix for something that ruins enjoyment of the car.
When you remove the cats, side sills become normal temps, foot wells become normal temps, and your paint no longer changes color on your side sills.

I am assuming he is talking about a gen 2 because of his avatar, if not then changing the rocker arms will most likely do nothing cause the SRT ones are already 1.7 ratio.
Roller rockers should easily bump you over 700rwhp, some people have seen 25rwhp gains on lightly modified cars in your case it may be a lot more.
