The list looks good, but if you plan on tracking the car (or even driving it hard a decent amount), I would use at least Motul 600 brake fluid in the brakes and clutch. With the higher boiling point, it will hold up better. You might also consider a 15W50 engine oil if you plan on tracking it.

I could be wrong (it HAS happened before), but my understanding is that it just has to be an approved HPDE event. Otherwise, only beginners could get it. When I bought it the first time, they just stressed that any racing (including TT) was not covered.
You don't have to have an instructor in the car with you. It just has to be a qualified HPDE event where instruction is offered. You can be in HPDE 1, 2, 3, or 4. TT, racing, etc is not covered.

There is one inside the trunk and the other two are the ones you see once you remove the plastic cover. I assume you found those two, but you're missing the one that's inside the actual trunk of the car.
