This is why the MoPar T-stat is labeled "Race T-stat"
In general, it is better to keep an all-aluminum motor a bit cooler over its lifetime, to prolong its lifetime. But 180 vs 190? Not broke - don't fix. You can overtax the stock radiator in race-event conditions (real racing, not drag racing!) and this just gives a slight edge. The motor runs better at 190-215 than at 180 !!!
