Yes, I did. I bought an aftermarket 100-250F oil temp gauge that I thought would be pretty close to the OEM gauges. Daytime yes, nighttime, no. It was much brighter at night since the OEM gauges have that blacked out look. Sooo.....
My Viper is from Canada. I had replaced the metric speedo, oil pressure, and water temperature gauges to get english units. I took the old metric water temp gauge (which reads 40-90-120 Centigrade) and used it with the aftermarket sending unit - works great. I also moved the gas gauge to far right so the more important gauges are closer to the driver.
One neat thing is that the now unused voltmeter connection provides the 12V, ground, and power for dash light to your new gauge. The only wire to run is the new sending unit wire.
I drilled and tapped a hole just above the oil pan drain plug. I have an old pan and saw that this area was thick enough for the relatively fine threads of the sending unit to provide a leak-free seal.
Last note; the Gen 1 oil thermostat (it's in the oil filter adapter) is set at 220F. Track time will get you up to 250F, so either buy the appropriate range (i.e. up to 300F) or be ready to see the needle in the "red" zone if you use the OEM water temperature gauge.
P.S. If you want to see the battery voltage, for $12 you can get one that sticks into the cigaretter lighter.
