The rack on my GTS is begining to leak. It has always leaked some, but
this last cruise seems to have made matters worse. After a couple of hours
of driving there is a drop or two on the ground and I'm having to refill the
pump about once every two months. Otherwise there is no other
operational issues with the current setup.

I have a used rack sitting in my garage. (Thanks Scharf!)

I plan on driving down to Charlotte, enjoying the weekend, then driving
back. With my current work schedule I am looking at maybe 10 days total
to replace it before then. Looking at how awkward it will be trying to wriggle
this out on the floor, I am wondering if I should risk it, or just run with
the bad rack?

I have seen the seals go out all at once, I would replace the rack.

I have used Lucas power steering stop leak with some success. If you have changed the fluid in your steering rack and pump, you might try that first (if you are sure it is in the rack and not a hose) and add the Lucas stuff at that time. It is thick and I would recommend adding it to clean fluid only because you will be amazed at how dirty old fluid is.
