What is normal op temp?

For stop and go traffic 75 degrees ambient I seem to run between the middle and higher black mark at the 190 with a little higher than that max.

Hard to tell exactly what the degrees are at those 3 marks, I gather that the middle one is 190?

Highway it seems to cruise at the lower of the three marks.

Is this normal?

How high of a reading are you getting at red lights/low speeds?
This >100 degree Texas heat has definitely had an effect on mine lately.

Halfway 'tween the center group of three marks and the next one. Slightly higher with the AC on. Yeah, so what if the AC forces the fan on. It's on anyway, and the 175 deg condenser in front of the radiator ain't good on cooling!
