If you are running 10.5 to 11.0 the stock plugs are fine. The problem is that the colder plugs probably will not be the extended reach, therefore, will not run that good on the street. On the other hand, at the track, one range colder will not hurt.

A scan tool is a must, however, take a look at Palmer OBD software, it has great logging capabilities. You can build your own tables for logging. How about logging these at one time:
RPM
Real throttle position
Apparent throttle position
Timing/advance
Knock retard
IAT
Ambient AT
Coolant Temp
