Happy Thanksgiving Baz! And a Happy Thanksgiving to the NY/CT crew!!!
First thanksgiving I'm not working in a very long time and I've been cooking up a storm. On tap today at ViperTony Kitchens:
- Turducken: De-boned chicken stuffed into a de-boned duck stuffed into a de-boned 22 pound turkey. Starting cooking this abomination at 4am today, should be ready at 3pm. Low and slow baby just like a Red Viper.
- Roasted Beet Salad, Candied Pecans, Goat Cheese, Beet Greens, Balsmic & Pomengrate Reduction, Fuji Apple.
- Country Biscuits
- Corn Bread
- Twice-Backed Potatoes (wife's recipe)
- Stuffing: My country bread, onion, apple, cranberry, celery, roasted chestnuts, turkey liver & heart, turkey stock, butter, sage, savory, thyme.
- Pecan Pie
- Pumpkin & Banana Mousse Pie
- Mixed Green Salad w/avocados, red onion, green apple, shaved parmesan, red wine vinaigrette
- Cranberry Sauce
- Sweet Potatoes
- Turkey Gravy
