does the temp go up under more aggresive driving conditons or does it go to that temp and stay there at idle??

This probably is not it but doesn't hurt to check.
With the Viper sitting so low it can pick up a piece of trash or a leaf etc. It will then sit at the bottom section of the radiator and increase the running temp.
Just look under the front part of the car, you know the part you have to try so hard not to scrape.
My car was running hot all of a sudden yesterday and I thought oh SH*T now my car. Well a guy was looking at it and he bends down and says hey you got something down here. I pulled it out, it was a candy bar wrapper. I drove it and, WHAM that is all it took. Car ran 20 degrees cooler just 5 minutes after it was getting well to the right of the 190 hash marks.
