The 2000 and up cars have cast pistons rather than forged and a slightly less aggressive cam, hence the creampuff tag. An X-creampuff is simply a 2000 up car that has had forged pistons and possibly a new cam installed.

I have dealt with Jenkins and they're straight up guys. That doesn't mean the particular car you're looking at is perfect, of course, but I don't think they would knowingly misrepresent anything about it.
Use the search function and read some of the recent threads on the Paxton kit. Several DIY people have had tuning problems with it as well and aren't happy.
