just changed spark plugs for first time on my 97 GTS and mechanic showed me an endoscope photo of carbon on cylinders heads. He suggested 100 octane gas , driving it more, and possibly some additive. Any suggestions??

Just drive it, that will likely help more than anything. Octane won't necessarily make a difference. If you only do short trips on the car and don't let it get up to temp and stay there for a while you're more likely to get buildup. A nice long highway jaunt can help to keep things clean.

The factory tune is a little rich, hence the carbon build up. Is this the first time they have been changed? (Not sure if there was a previous owner).

Many would suggest Seafoam....you might want to research it...try bobistheoilguy.com using search for "carbon buildup".
