Can accelerating at wide open throttle & speedshifting from 3rd to 4th, but missing the shift, cause the motor to spin much higher than the rev limiter?

Not talking about a bad shift from 3rd to 2nd.

Hypothetically, with the SCT & Rev Limiter set to 6200rpm could a missed 3rd to 4th shift cause the motor to spin to 7000rpm?

No you'll just hit the rev limiter of 6050..On that note I wouldnt recommend haveing you limiter set to higher than 6100 if you get a tune.

I almost went from 3rd back to 2nd at redline, something told me not to let the clutch out till I slowed down. It was in 2nd, not 4th

No. Not on a missed shift, the engine would need power to accelerate to a faster rpm. No power is available above the rev limiter as spark is cut.

On an accidental down shift it is possible as there is a mechanical link making the motor match the drivetrain/gear speed.

I can tell you on the accidental shift from 3 to 2, the tach needle can fly off the chart...for some reason, 100mph in 2nd isn't really a good thing.
