I see most heads and cam packages pushing upwards of 750hp(fly). Most being 650-700hp range. How did mopar push 800hp our of their crate motor? Is it a stroker?

Easy. Its a Gen-4 based high-compression engine with a big camshaft, and no accessory drag other than the alternator. It is not a stroker... and not exactly the most streetable.

Compression went from 10.2:1 to 12.5:1 with a revised intake and beefed up internals. As Dan pointed out, a very big cam too. There have been a few adapted for street use, even with A/C added back in. Pretty darn pricey though, so check with tuners like Viper Specialty, Doug Levin, Woodhouse Motorsports, and Roe Racing for custom builds as another option.
