How light (for roadracing) can you make a GTS by removing the interior,a/c, etc..?
Note: No carbon fiber panels allowed and front and rear windshield must remain original.

(no offense meant) What about your own weight? It's often overlooked, but it's unbalanced weight in the car and most people could stand to lose a few pounds themselves. I mean if we want to get picky about shaving every little pound...

You can get down to around 3000# without too much fuss. Frank Parise posted accurate numbers on this subject a couple of months back.
